Recipe: How to Make Your Probiotic Cucumber Mint Refresher

  1. Start with Cucumber Water: Slice cucumber, lemon, and mint and infuse them in filtered, alkaline water overnight in the fridge. This creates a base full of flavour and nutrients.

  2. Combine with Ginger Bug: Add your cucumber water to a clean jar, then mix in equal parts sugar and ginger bug (about ¼ cup of each per litre of water). Stir until dissolved.

  3. Fermentation: Cover the jar loosely with a cloth or lid and leave it at room temperature for 2-3 days. This allows the ginger bug to ferment the sugars, creating natural carbonation.

  4. Check for Fizz: On day 2, give it a taste. If it’s not fizzy enough, let it ferment for another day or two. Warmer temperatures can speed up fermentation. Once it’s bubbly to your liking, refrigerate it to stop the fermentation process.

  5. Optional Tip: If it’s still not as bubbly as you’d like, top it up with sparkling water before serving.

Pro Tips & Cautions

  • Don’t seal it too tightly during fermentation—pressure can build up and cause the jar to burst. Make sure to burp it daily by opening up the lid to allow the gas to exit

  • You can ferment with a cloth instead of a lid as well to allow the gases to escape, but it will take a bit longer to ferment.

  • Always taste-test your ferment to ensure it’s not over-fermented, which can make it too sour.
