Use an Active Ginger Bug – The starter should be bubbly and slightly tangy before adding it to the tea.
Ferment for 2-3 Days –
Shorter ferment = milder fizz & slightly sweet.
Longer ferment = tangier & more probiotic-rich.
Refrigerate Once Carbonated – This slows fermentation and keeps the flavor balanced.
For More Fizz, Bottle It – Transfer to an airtight bottle for 1-2 days before refrigerating to trap carbonation.
Sencha Serenity Recipe
Ingredients:
450 ml of filtered water
1 tbsp loose-leaf green tea (or 2 tea bags)
1 tsp dried rosemary (or ½ sprig fresh)
1 tbsp dried chamomile flowers
2 tbsp (30 ml) raw honey
100 ml strained ginger bug starter
Instructions:
Heat 255 ml of filtered water to 75-80°C (170-175°F) and steep green tea, rosemary, and chamomile for 5-10 minutes.
Strain and let cool to room temperature.
Stir in raw honey until fully dissolved
Pour into a clean glass jar, add 1 inch of ginger bug, and top with the rest of the filtered water.
Cover and let ferment at room temperature for 2–3 days until slightly bubbly.
Refrigerate and enjoy chilled.
