Creamy Kale & Cashew Sauce for Your Luteal Phase
If you’re looking for a delicious, nutrient-packed way to support your luteal and menstrual phases, this creamy kale and cashew sauce is your new best friend! Kale is a powerhouse of iron, calcium, magnesium, and vitamin C—all essential nutrients to help your body thrive during this time of your cycle. But let’s be honest: kale’s taste can be a little… intense.
That’s why I turned it into a rich and creamy sauce that I love adding to my favourite dishes, like homemade pizza. The secret to toning down the kale’s flavour? Blanching. Trust me, it’s a game-changer! All you need to do is boil the kale for 2 minutes, then transfer it to an ice bath to lock in its vibrant green colour and mellow out the taste.
The Recipe: Kale, Cashew & Cauliflower Sauce
Here’s how to whip up this creamy, dreamy sauce:
Ingredients
1 cup raw cashews (soaked for 2–4 hours or boiled for 10 minutes)
1 cup cauliflower florets (steamed or boiled until soft)
2 cups fresh kale, stems removed, roughly chopped
2 garlic cloves
1/4 cup grated Parmesan cheese
1/4 cup olive oil (adjust for consistency)
Juice of 1/2 a lemon
1/2 tsp salt (adjust to taste)
1/4 tsp black pepper
1/4–1/2 cup water (adjust for desired consistency)
Optional: 1/4 tsp crushed red pepper flakes or smoked paprika for extra flavour
Instructions
Prepare Cashews and Cauliflower: Soak or boil the cashews, and steam or boil the cauliflower until tender. Drain both.
Blanch the Kale: Boil the kale for 1–2 minutes, then transfer it to an ice bath to cool. Drain well.
Blend It Up: Add the cashews, cooked cauliflower, kale, garlic, Parmesan, olive oil, lemon juice, salt, and pepper to a blender or food processor.
Adjust Consistency: Gradually add water while blending until you achieve a smooth, creamy texture. Keep it thick for spreading or thin it out for drizzling.
Taste Test: Adjust the salt, pepper, or lemon juice to suit your taste buds.

This sauce isn’t just for pizza (though it’s amazing as a base for your favourite toppings). Use it as a pasta sauce starter, spread it on crusty bread, or even stir it into soups for an extra nutrient boost. It’s rich, creamy, and full of flavour—the perfect way to sneak in some greens.
