Beet Peel Fermented Soda Recipe

Ingredients:

  • 2 cups beet peels (organic if possible)

  • ½ cup fresh or frozen raspberries

  • 4 cups filtered water

  • ¼ cup sugar or honey

  • 1 tbsp grated fresh ginger (or ¼ cup ginger bug starter)

  • ½ tsp cinnamon

  • ¼ tsp cloves

  • ½ tsp salt (Himalayan or sea salt)

Instructions:

  1. Dissolve the sugar in water – Warm the water slightly and stir in the sugar until fully dissolved. Let it cool to room temperature.

  2. Add all ingredients to a clean glass jar – Place the beet peels, raspberries, ginger, cinnamon, cloves, and salt into the jar, then pour the cooled sugar water over them. Stir well.

  3. Ferment – Cover the jar with a breathable cloth and secure it with a rubber band. Let it sit in a warm place (around 20-25°C / 68-77°F) for 3-5 days, stirring daily. You should see bubbles forming as it ferments.

  4. Strain and bottle – Once the drink is tangy and slightly fizzy, strain out the solids and transfer the liquid into airtight bottles. Leave 1-2 inches of space at the top.

  5. Carbonate (Optional) – If you want extra fizz, seal the bottles and let them sit for another 1-2 days at room temperature before refrigerating. Be sure to “burp” them daily to release pressure.

  6. Enjoy! Serve chilled and enjoy its earthy, fruity, and spiced flavour as a refreshing way to support your menstrual phase.
