Best Tips for Fermenting Karoo Glow Fizz

Using a ginger bug starter ensures a naturally fizzy and probiotic-rich drink. Here’s how to get the best results:

Dissolve honey in warm tea – This feeds the fermentation and enhances the flavour.

Cool tea to room temperature – Hot liquids can kill the beneficial bacteria in the ginger bug.

Use an active ginger bug – Make sure your starter is bubbling before use.

Ferment for 2–3 days – Check daily for carbonation. The longer it ferments, the tangier it becomes.

Bottle for extra fizz – After straining, transfer to airtight bottles and let sit for another 1–2 days for additional carbonation before refrigerating.

Karoo Glow Fizz Recipe

Ingredients:

  • 4 cups (1 litre) filtered water

  • 1 tbsp loose-leaf rooibos (or 2 tea bags)

  • 1 tsp dried lavender

  • 1 cinnamon stick (or ½ tsp ground cinnamon)

  • 2 tbsp raw honey

  • 1 inch ginger bug starter

Instructions:

  1. Bring water to about 90°C (194°F) and steep rooibos, lavender, and cinnamon for 15–20 minutes.

  2. Strain and let cool to room temperature.

  3. Stir in raw honey until dissolved.

  4. Pour into a clean glass jar, add 1 inch of ginger bug, and top with filtered water.

  5. Cover loosely with a cloth and let ferment at room temperature for 2–3 days until slightly bubbly.

  6. Strain and bottle. Optionally, leave for 1–2 more days in an airtight bottle for extra fizz.

  7. Refrigerate and enjoy chilled!
